There are a million ways to make this breakfast classic. Here’s my go-to when I find ripe avocados at the local green market or bodega. Makes a perfect breakfast or a light lunch 🙂 It’s perfection.

Avocado Toast with Blue Cheese
Whole Wheat Bread or French Bread
1 Ripe Avocado
Red Pepper Flakes
optional: 1 scrambled egg*
1. Butter the toast and broil on high for 1.5 – 2 minutes.
2. Smash avocado and add salt and pepper to taste.
3. Spread avocado on buttered toast and sprinkle with red pepper flakes
4. Drizzle with lemon juice.
5. Add crumbled gorgonzola.
